Equipment

  • Griddle/pan to cook pancakes

Ingredients

  • 1 cup all-purpose flour
  • 1 ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • teaspoon salt
  • 2 tablespoon melted butter cooled to room temperature
  • 2 tablespoon granulated sugar
  • 1 large egg at room temperature
  • 1 ½ teaspoon pure vanilla extract
  • 1 cup buttermilk at room temperature
  • ½ cup chocolate chips
  • Toppings like: Fresh cream, strawberries and honey

Instructions

  • Whisk the dry ingredients. Grab a bowl and a whisk and combine baking soda, flour, baking powder, and salt.
  • Whisk the wet ingredients. In a different bowl, whisk sugar, melted butter, egg, and vanilla together. Once that is mixed well, add in the buttermilk and whisk it in too.
  • Combine the ingredients. Pour wet ingredients into bowl of your dry ingredients and fold them together with a spatula. Add in the chocolate chips and fold them in. Don't overmix. (The batter is going to be thick and may have some lumps in it - this is okay!)
  • Preheat your griddle. I love cooking pancakes on a griddle. Preheat your griddle to 350 degrees. You can also use a frying pan on the stove, too. Add oil to your griddle and pour the pancake batter on it, once it is hot. I use a ⅓ cup measuring spoon to keep them all the same size.
  • Cooking your pancakes. Don't flip pancakes until you see small bubbles forming and settling on the surface of batter. This will take about 2-3 minutes. Once you see bubbles settling, flip and cook for another 1-2 minutes of time.
  • Serve. Serve with toppings of your choice. I used fresh cream, strawberries and honey.

Notes

How to Reheat Pancakes?
  1. Preheat oven to 350 degrees F. Place pancakes on a non-stick baking sheet and arrange them in a single layer.
  2. Cover sheet tightly with aluminum foil and place it in oven and reheat for 5 to 10 minutes.
How do you store pancakes?

Place the pancakes in a freezer safe container/ziploc bag for up to 3 months. Reheat before enjoying!
Tips to make perfect Pancakes:
  • Pancakes aren't hard to make but the biggest thing to remember is that you don't want to overmix the batter. This will cause the pancakes to turn out flat and dense.
  • Next thing to keep in mind is the flipping time. Flip your pancakes not when you see bubbles on them, but flip when you see those bubbles settle on the surface of pancake. This would take around 30 secs more after the bubbles are formed. And you will be guaranteed fully cooked and fluffy pancakes.
