Peanut Butter Mug Cake

Moist and fluffy Peanut Butter Mug Cake microwaved as a single serving dessert. What's the best thing about Mug Cakes? They get ready within 5 minutes, not much clean up is needed either.

Equipment

  • 1 Large Mug (14 oz)
  • 1 Small Balloon Whisk/Fork

Ingredients

  • 2 Tablespoons Butter (I used salted)
  • 3 (1 and ½) Tablespoons Dark Chocolate
  • 2 Tablespoons Milk (room temperature)
  • 1 large Egg (room temperature)
  • 3 Tablespoons Granulated sugar
  • 3 Tablespoons All purpose flour
  • 1 teaspoon Unsweetened Cocoa Powder
  • teaspoon Baking Soda
  • ¼ teaspoon Baking Powder
  • 1 Tablespoon Smooth Peanut Butter

For Topping:

  • 2 Tablespoons Chocolate chips
  • 1 Tablespoon Peanut butter

Instructions

  • Melt butter and dark chocolate in a large mug using small increments of 10-15 seconds until melted. Give it a quick mix.
    2 Tablespoons Butter, 3 (1 and ½) Tablespoons Dark Chocolate
  • Add room temperature milk, egg and sugar to slightly cooled down mixture. Using a small whisk mix till every thing gets well combined.
    2 Tablespoons Milk, 1 large Egg, 3 Tablespoons Granulated sugar
  • Sift flour, cocoa, baking soda and baking powder over wet ingredients and fold till flour disappears into the batter.
    3 Tablespoons All purpose flour, 1 teaspoon Unsweetened Cocoa Powder, ¼ teaspoon Baking Powder, ⅛ teaspoon Baking Soda
  • Drop a dollop of peanut butter into the batter and do not stir it. After baking, the nut butter will transform into a creamy melty texture that goes wonderfully well with cake.
    1 Tablespoon Smooth Peanut Butter
  • Microwave for 1:30 minutes on full power. Carefully using a mitten take the mug out and check for doneness. If a tooth pick comes out mostly clean, it's done. If you see wet batter on tooth pick, cook it for another 30 seconds.
  • Pour the remaining peanut butter on top of warm cake and top with chocolate chips. Enjoy!

Notes

Storing this Mug Cake:
Mug cakes tend to change texture and dry out pretty easily. So I don't recommend storing them for long. You can still store leftovers for a few hours covering the mug with a cling wrap.
Warm the cake for a few seconds before enjoying!
A note on Cocoa powder:
Both natural and dutch processed Cocoa powders can be used here. Take care not to use more than a teaspoon. Level it off with the back of a spoon or fork before adding to the batter.
