I have made a ton of spice cakes when I was testing this recipe. Most of them turned out dense. Some were dry. But I obviously did not stop till I achieved the results that I was desiring.
And the result? A tender, moist yet not too dense cake that tastes good even without without the crutch of any frosting! We won't skip it for obvious reasons.
But just mentioning how good the cake tastes on its own!
By analyzing what makes each recipe exceptional, you can master the science behind- a perfectly tender crumb, balanced seasonal spices and the ultimate cream cheese frosting pairing.
Secret to Moist and Tender Crumb:
- Vegetable Oil: Using oil instead of butter guarantees that the cake stays moist for days after baking. Oil remains a liquid at room temperature, keeping the cake crumb incredibly soft.
- Unsweetened Applesauce: This is the ultimate baker's secret weapon. Replacing a portion of the fat with applesauce adds a mountain of moisture and natural sweetness. This way you don't need to add heavy oils or masking the batter the spices.
- Real Buttermilk: The natural acidity in buttermilk breaks down tough gluten strands in the flour. This results in a delicate, melt-in-your-mouth texture.
Ingredients and what they do in the recipe:
- All-Purpose Flour: Gives the cake its core shape. Sturdy all-purpose flour is required here to hold up the heavy, wet batter.
- Vegetable Oil: Unlike butter, oil remains a liquid at room temperature. This guarantees a melt-in-your-mouth, super-soft crumb that stays fresh and never turns dry or crumbly.
- Dark Brown Sugar: It's used for flavor and hydration. It replaces all standard white sugar. The natural molasses content deepens the rich caramel flavor. Brown sugar also locks in long-lasting moisture.
- Unsweetened Applesauce: It provides massive amounts of moisture and a hint of natural sweetness. This allows you to cut back on the amount of oil needed. This ensures the cake is incredibly juicy without becoming greasy.
- Baking Powder and Baking Soda: They react with the acidic elements in the applesauce and molasses, creating tiny air pockets. Leaveners help this heavy and dense batter rise evenly in the oven.
- Eggs and Vanilla Extract: Eggs provide structure and emulsify the fats for a smooth batter. While vanilla rounds out and enhances the warmth of the ground spices.
How this cake comes together:

The perfect Spice Blend:
- Cinnamon: The familiar, warm base note that anchors the entire cake.
- Nutmeg: Adds a distinctly nutty, aromatic depth.
- Ginger: Provides a very subtle, zesty warmth.
- Cloves: A little goes a long way, giving the cake its traditional, old-fashioned punch.
- Cardamom: A dash of it takes your cake to next level.
- Star Anise: I'd say its optional but the cake tastes so much good with this add on!
The pairing of Cream Cheese Frosting:
Baking Versatility: Timings and Cake Pans
- 9x13-inch Sheet Cake: Bake for 30 to 38 minutes. This is the easiest, most travel-friendly option for parties.
- Two 9-inch Round Cake Layers: Bake for 25 to 30 minutes. Perfect for creating a stunning, stacked centerpiece cake.
- Cupcakes: Line a muffin tin and bake for 18 to 22 minutes to make a batch of portable, individual autumn treats.

Make-Ahead and Storage Tips:
- Storage: Because of the dairy in the cream cheese frosting, store any leftovers wrapped or covered in the refrigerator. It will stay remarkably fresh and moist for up to 5 days.
- Freezing: You can easily bake the cake layers ahead of time. Once completely cool, wrap the unfrosted layers tightly in plastic wrap and aluminum foil. Freeze for up to 3 months, then thaw in the refrigerator overnight before frosting and serving.

- If you notice the top of cake is browning too quickly in the oven, cover it loosely with an aluminium foil. Once baked, take the cake out of oven and allow it to cool in the pan for 5 minutes. Then flip the cake out on a wire rack and allow to cool completely before frosting.
Notes
- Spices: If you wish you can skip star anise and cardamom altogether. But they add to the depth of this cake.
- Oil: Vegetable oil works best in this batter. though any flavorless oil works. Even refined coconut oil that doesn't have a pronounced taste works. Don't attempt to replace oil with apple sauce or the texture of cake can turn rubbery.
- Applesauce: Use unsweetened applesauce in this recipe. You can use mashed banana, pumpkin puree, or canned crushed pineapple instead of applesauce. But remember that the flavor of the cake will change with whichever ingredient you choose.
