You can easily use any flavored burfi of choice. We are rolling the burfi into small balls and coating them in chocolate for a fun twist today.

Basically you are rolling peda out of a homemade barfi mixture and coating them in chocolate. We all love fusion desserts for a reason! 😉

You only need a few ingredients and a little patience to make this bite sized dessert. I say patience since we are working with chocolate here.

Keeping a few things in mind makes sure that your dessert balls/truffles look good and taste wonderful!

Ingredients to make this recipe:

Ingredients like melting wafers and burfi crumbs to make burfi truffles

To make Barfi, ou can choose any flavor of your liking for the truffles like cardamon, pista, almond or chocolate etc. I chose kesar Burfi. You can easily make the truffle filling at home using a few ingredients. you will need:

Butter: Use unsalted butter for best flavor.

Milk Powder: Whole milk full fat milk powder works best here. I like to use NIDO brands milk powder. You can easily find it in Indian Grocery stores.

Confectioners' Sugar: Confectioners' sugar or powdered sugar works best here. It contains a little cornstarch along with sugar that gives burfi a perfect melt in mouth consistency. Do not replace it with granulated sugar as it can make your truffles grainy. 

Chocolate for Coating burfi truffles

Toppings: Now toppings can be a personal choice but silver or gold leaf looks pretty and gives your dessert a little bling!

Now I topped mine with some slivered pistachios as pistachios and kesar (saffron) are a match made in heaven.

I also topped them with some dried rose petals as I used some rose water while making my burfi. These toppings are totally up to you!

Everything you need to know about Chocolate:

 Use melting wafers or candy melts for chocolate coating. You can use any variety of chocolate here like white chocolate, milk chocolate or semi-sweet chocolate as well.

But don't melt chocolate chips as they are not made for melting!

How to make this Diwali Sweet:

Add butter and milk to a pan over heat and allow the butter to melt. Once the butter has melted add in milk powder and stir till everything mixes together.

Then lower the flame and add in powdered sugar too. Continue to cook till most of the milk evaporates.

You can add flavorings of choice here. I added saffron and a teaspoon of rose water. You can also make it cardamom flavored if you like.

Allow the mixture to cool down a bit and then you should be able to form a ball that doesn't stick on your hands.

If you find the mixture is sticking to your hands at this point, cook it for another minute or two. Do not overcook at this point.

Now using a blender, smooth the mixture out to get rid of any lumps formed. Refrigerate the mixture for 30-45 minutes.

Step by step tutorial on hoe to make burfi balls.

Then divide the mixture into small portions roughly 25-30 gms and roll them between your palms one at a time.

In this way round balls out of the mix will be formed.

Form balls till all the mixture is used up. Quickly freeze the balls for 15-20 minutes and melt the chocolate.

Dip balls in melted chocolate and quickly top with toppings of choice. Allow them to set.

Tips for recipe success:

  • If you notice burfi balls are breaking or cracking as you roll them, add a bout a tablespoon of milk in the dough. Mix the dough again to be able to make crack free balls. 
  • Always keep your burfi dough balls in the refrigerator for a few minutes to chill and set for a bit to coat them in chocolate.
  • Don't freeze them for too long either to chill. Otherwise when you dip them in warm chocolate, dur to dough expansion the coated chocolate might crack.
  • Right Temperature for chocolate and dough balls: So keep the dough balls cold to the tough but not super chilled and the chocolate warm but not too hot. And your truffles will look the prettiest. 
  •  Always keep chocolate coated truffles refrigerated since this one is a milk based recipe. Also they taste best served chilled!

Burfi Dessert Balls

Ingredients

  • 1 batch Homemade Burfi (store bought is fine too)
  • 2 Cups Melting Wafers or Candy Melts
  • 1-2 Tablespoons Whole Milk

To Top:

  • 3 Tablespoons Mix of rose petals and slivered pistachios
  • Silver Leaf

Instructions

  • Crumble store bought or homemade burfi by either giving it a few pulses in blender or just with your hands till a smooth dough is formed..
  • Try making small balls out of this mixture. If you notice your are not able to make a crack free ball out of it, add a little milk to this mixture and mix it well. Just add about a tablespoon at a time and mix.
    The amount of milk to be added depends on how moist or fresh your burfi is. Adding milk will make it soft and moldable if it is too dry.
  • Roll whole mixture into around 1-1.25 inches balls and allow them to cool in refrigerator till you melt your chocolate.
  • You can melt chocolate either using a double boiler or in the microwave. I used microwave to melt my melting wafers. Place candy melts/melting wafers in a microwave safe bowl and allow them to melt by running microwave in small increments (about 30 seconds).
  • Stir the chocolate after every increment using a spatula. If you notice your chocolate is too thick, you can add around a teaspoon of coconut oil to thin it out. Once the chocolate has melted, allow it to sit for a minute or two so that its not too hot when you dip burfi balls into it. I like to transfer my melted chocolate to a cup, which makes it easy to coat the entire ball at once.
  • Now take balls out of refrigerator and dip balls in chocolate using a fork and get the excess chocolate off by tapping fork on side of the cup. Allow them to set on a parchment paper lined tray completely before touching them.
  • This step is optional but looks very pretty. Pour some chocolate in a piping bag or a ziploc and sniff off the end to about 2 mm thickness. Drizzle the chocolate over set truffles in a zig-zag manner for that decoration on top. Quickly top with rose leaves or nuts before the chocolate sets. Enjoy!

Notes

Quick Tips:
I made my burfi dough using kesar (saffron) burfi. You can choose any burfi of choice. Also a teaspoon of cardamom powder or a teaspoon of rose water can also be added to milk burfi dough to enhance its flavor.
Instead of white chocolate, these truffles can also be coated in dark or semi sweet chocolate.
