What is a mug cake?
Just like the name states, it is a cake that's made in mug generally in microwave. But if you like you can also bake these in traditional ovens using ramekins or any other oven safe dishes.

Ingredients Required:
- Banana: Take a ripe banana and mash it on a separate plate or in the same mug that you will microwave your cake in.
- Sweetener: I have used brown sugar to sweeten this cake. You can also take honey in equal quantity if you prefer. Or if brown sugar in unavailable at your end.
- Egg: You will need one egg here. Yes we are using one whole egg to make this mug cake. Make sure it is at room temperature and whisk it real good. Whisking it for 1-2 minutes will make sure it gets mixed evenly in the rest of batter. This will in turn make sure your mug cake doesn't taste like banana flavored scrambled eggs!
- Cinnamon: I have used some ground cinnamon to flavor my cake. I suggest you do too. You can even use ⅛ teaspoon of nutmeg along with it if you like spice flavor in your cakes.
- Butter: We are using melted butter in this recipe. You can easily replace that with a tablespoon of coconut oil as well.
How to make this cake?
Now it doesn't get any easier! If you can whisk a few ingredients in a cup using a fork, you can nail this cake! Check out in simple steps how we are making it today:
- Whisk your egg: Whisk an egg well in a microwave safe mug. You can use a milk frother to make this job easier if you like.
- Add mashed Banana: Add in a mashed banana, melted butter, sweetener and give it a quick whirl again.
- Add Dry Ingredients: Now I like to sift my dry ingredients directly over this mug. You can sift them separately as well. But sift them. It is hard to get rid of those flour lumps if you don't sift the dry ingredients prior to adding them in wet.
- Add ons of choice: Fold the dry ingredients into wet and add in chocolate chips or nuts of choice too for crunch if you desire.
- Sprinkle with Cinnamon: I sometimes like to sprinkle my cake with more cinnamon on top, right before cooking it.
- Microwave it: Cook it in microwave till done.
- More toppings: Top with more chocolate chips, some banana slices, honey/maple syrup and some butter to make it even more fun!
How to tell if a mug cake is done?
When you lightly press the center of your cake, it should spring back and nothing should stick to your finger. When the cake is cooked in the center, you can be sure it is fully cooked.
Why is my mug cake so dry?
One reason might be that you ended up over cooking your mug cake. Another could be you over measured your dry ingredients. If you add less fat in your mug cake, it can turn out dry in that case as well.
Tips and tricks to make perfect mug cakes:
My cake is dry: To prevent a dry cake, measure your flour right, add enough fat in the batter and keep a check on the cooking time. Check at smaller intervals to make sure you don't over cook it.
My mug cake is not fluffy: Make sure you are using fresh leaveners and are not adding way too much flour into the batter.
My cake is chewy: Chewy cakes can be the result of over measuring your wet ingredients or you ended up using too much fat than stated in the recipe.

Banana Mug Cake
Equipment
- 1 12 oz Cup (microwave safe)
Ingredients
- 1 large Egg (at room temperature)
- 1 Tablespoon Melted Butter
- 2 Tablespoons Brown Sugar
- ¼ teaspoon Pure vanilla extract
- a pinch Salt
- 1 large Banana (medium, mashed)
- 3 Tablespoons All purpose flour
- ⅛ teaspoon Ground cinnamon
- ½ teaspoon Baking Powder
- 1 Tablespoon Walnuts (chopped, optional)
- 2 Tablespoons Chocolate Chips (of choice)
- 1 Tablespoon Milk (at room temperature)
For Topping:
- Few Banana Slices
- 1 Tablespoon Chocolate Chips
- ½ Tablespoon Butter
- ½ Tablespoon Honey/ Maple Syrup
Instructions
- Break a room temperature egg in 12 oz microwave safe mug and whisk it with sugar, vanilla and salt until well combined. Next add in a mashed banana, melted butter and give it a quick mix too.
- Sift flour, baking powder and cinnamon over wet ingredients right in the mug and fold to combine. Add dry ingredients in two additions for easy mixing.
- Next add in remaining flour, a tablespoon of milk, walnuts and chocolate chips. Stir them all in. Top with a few chocolate chips and a sprinkle of cinnamon. Microwave the batter for 3 minutes. Check after 2 minutes for doneness in between. If there is no wet batter in sight, skip cooking it for one more minute.
- The cake will rise above the rim of your mug as it cooks, but it won't spill. Just make sure to use a large sized mug to avoid spilling. Once cooked, carefully remove it from microwave, make use of gloves as the cup will be very hot.
- Allow it to cool for 1-2 minutes in the mug itself. Top with banana slices, a dallop of butter, some honey/maple syrup and more chocolate chips. Dig in!
