RECIPE INGREDIENTS:

You only need a few simple ingredients to make these pancakes! I am pretty sure you have them all in your pantry right now.

  • all-purpose flour - needed to make the pancakes form
  • baking powder - combined with the baking soda, this makes the pancakes fluffy
  • salt - just a tiny bit of salt goes a long way
  • butter  - use unsalted butter if you're adding salt
  • egg - make sure the egg is at room temperature
  • buttermilk - this should be at room temperature as well
  • chocolate chips - mini chocolate chips would work just fine

HOW TO MAKE CHOCOLATE CHIP PANCAKES

Whisk the dry ingredients. Grab a bowl and a whisk and combine the baking soda, flour, baking powder, and salt.

Whisk the wet ingredients. In a different bowl, grab your whisk and whisk together the sugar, melted butter, egg, and vanilla. Once that is mixed well, add in the buttermilk and whisk.

Combine the ingredients. Pour the bowl of wet ingredients into the bowl of your dry ingredients and fold them together with a spatula. Add in the chocolate chips and fold them in. Don't overmix. (The batty is going to be thick and may have some lumps in it - this is okay!)

Preheat your griddle. I love cooking pancakes on the griddle. Preheat your griddle to 350 degrees. You can also use a frying pan on the stove, too. Add oil to your griddle and pour the pancake batter on once hot. I use a ⅓ cup measuring spoon to keep them the same size.

Cooking your pancakes. Don't flip the pancakes until you start to see small bubbles forming and settling in the batter. This will take about 2-3 minutes. Once you see the bubbles settle, flip and cook for another 1-2 minutes of time.

Serve. Take pancakes off the griddle and serve with toppings of your choice.

WHAT ARE THE BEST TOPPINGS FOR PANCAKES?

This all just depends on who you ask. I'm all about whipped cream, maple syrup, and pancake syrup, too. Some people will add fresh berries to the top as well.

Another way to sweeten up your stack of pancakes is to add powdered sugar or even serve the pancakes as a dessert with a drizzle of hot fudge and ice cream!

CAN YOU FREEZE COOKED PANCAKES?

Absolutely! This is one of the best ways to meal prep for mornings. I like to cook up a huge batch of pancakes and then I freeze them in serving sizes. When I'm ready to eat them again, I just unthaw, reheat, and enjoy.

How do you keep pancakes from sticking on a griddle?

Fluffy pancakes made with buttermilk and chocolate chips. Top then with berries and cream for a treat.

You have to be sure to grease the pan or griddle that you're cooking your pancakes in. If you don't, they'll stick and make a giant mess. I recommend greasing a few times during the cooking process just to be on safe side.

QUICK TIPS FOR MAKING HOMEMADE PANCAKES

  • Pancakes aren't hard to make but the biggest thing to remember is that you don't want to overmix the batter. This will cause the pancakes to turn out flat and dense.
  • Next thing to keep in mind is the flipping time. Flip your pancakes not when you see bubbles on them, but flip when you see those bubbles settle on the surface of pancake. This would take around 30 secs more after the bubbles are formed. And you will be guaranteed fully cooked and fluffy pancakes.

I find pancakes have to be either super-think like French crepes - or super-fluffy like these. Will definitely try this recipe on a Sunday morning 😉
