When vanilla meets strawberry! These cookies are one of my favorite recipes since these are Cake Mix Cookies. Unbelievably soft, puffy, oh-so-chewy, simple and easy. Hello convenience! And the flavor? Oh so satisfying!!

These Cake mix cookies are:
- Super soft and tender in the centers
- Oh-so-chewy on the edges
- Use strawberry cake mix and vanilla cake mix
- Dipped in melted dark chocolate
- Topped with valentines sprinkles
- Completely irresistible π
Have you ever made cookies from cake batter? If not, you are in for an amazing treat. Not only they are easy to make, these also use a very few ingredients. And flavor choices are countless!
Top with sprinkles, or sparkling sugar, dip in chocolate, OMG Nutella(!), coat with nuts. Go crazy. Have fun! They are your cookies.
I dunk mine in chocolate.
And nope, I did not stop there!
Valentines is around the corner. How could I forget hearts where chocolate and strawberries are involved! Tell me I did right.
How to make these Italian cookies:
- Make the dough from these two cake mixes (strawberry and vanilla) separately.
- Dump some vegetable oil, eggs and leavener in both the mixes.
- Mix using a hand mixer to combine and form dough. You can also make the dough using a wooden spoon or even a whisk. I told ya, this one is a super easy cookie dough.
- Form mounds and roll them roughly, you will get approximately 24 balls from each flavor.
- Make cookie balls rolling both doughs together in your palm, making sure you get half vanilla and half strawberry on top of each ball. Now this step is just for the looks. Even if you can't roll them to look perfect, they will still taste the same, promise!
- Quickly chill the cookie dough balls in freezer as your oven preheats. This step will ensure your cookies bake thick and puffy.
- Bake, till the cookies are done.
- Allow the cookies to cool down completely and then dip β of the cookie in melted chocolate.
- Top with sprinkles quickly or else the chocolate will set. Now take a big bite!

Melting Chocolate for Cookies:
Chocolate slabs or even melting wafers can be used for these cookies. To melt chocolate, you can either melt in microwave or even a double boiler can be used.
I prefer to melt mine in microwave. Chop chocolate in small chunks and microwave it for a minute. Now stir well and microwave in 15-30 seconds increments till the chocolate is completely melted.
Allow the chocolate to cool down a bit (for about a minute or so) before dipping baked cookies in it.
If you notice that your chocolate is thickening more than your liking, you can add a teaspoon of coconut oil to it. After adding oil, melt the chocolate again and mix quickly before dipping more cookie in it.
Tips to make these cookies thick and puffy:
- Roll your cookie dough on taller side and don't press them in the center
- Quickly chill them in the freezer till these balls are firm to touch
- Don't over bake them, even when they appear soft in the center. The cookies will firm up a lot more as they cool down.
There's truly nothing better than sinking your teeth into a soft, puffy and tender cookie filled with strawberry and vanilla flavors. Dip them in a pool of melty chocolate and you've got some pretty cookies!

Recipe Variation:
If you don't want to go through the hassle of melting and dunking cookies in chocolate and wait for the cookies to set, try this instead.
Get 3 boxes of cake mixes. Strawberry, Vanilla and Chocolate as well. Make three separate doughs. Then make about 1 tablespoon sized balls from each dough. Grab one ball from each dough flavor and form one cookie dough ball by rolling them in your palm together.
Bake these cookies at 350 deg F for about 10-12 minutes or till they appear fluffy. Don't be tempted to brown them too much. Or else you will end up with overbaked and dry cookies.
Allow the cookies to set on the cookie tray for sometime. About 8-10 minutes. This step will help the cookies firm up quite a bit.
Then set them on a wire rack to allow them to cool completely.
Tips for perfect Cookies:
- Always bake a test cookie first: Whenever I set out to make cookies in large batches, I always bake one cookie in the beginning to check how much it is spreading, how is the flavor. Or how much the cookie puffs up. Because there is always room for improving the dough if there is a problem with the baked cookie.In this case if you notice your cookies are spreading to much or are baking flat, chill that dough! Now you can do so in refrigerator for a few hours or if you are impatient like me, set the dough balls in the freezer till they get super firm to touch. Now these are ready for oven. Should not take more than 15-20 minutes.
- Always bake on the middle rack: Every oven has hot spots. Or even when you place baking trays/pans too close to one of the heating elements, that side (the side closer to heating element) starts baking pretty faster than the other sides.You don't want that. We want to promote even baking. So center of the middle rack is always the apt spot for baking.
- Don't wait for your cookies to change color for this recipe: These cookies will have done baking when you noticed they all have puffed up well. If you wait for them to get a brown color, by that time your cookies would have overbaked. So avoid this mistake by all means.

Neapolitan cookies
Equipment
- Cookie tray
- Parchment Paper/Silicone Baking mats
- Cookie scoop
Ingredients
- 1 box Vanilla Cake Mix
- 1 box Strawberry Cake Mix
- Β½ Cup Oil (divided)
- 4 Large Eggs (at room temperature)
- 2 teaspoons Baking Powder (divided)
- 1 and Β½ Cups Melted chocolate
- Β½ Cup Sprinkles (optional, but pretty)
Instructions
- Preheat your oven to 350 deg F and line a large cookie sheet with parchment paper/silicone baking mat and set aside.
- Take two mixing bowls. Add vanilla mix in one and strawberry cake mix to another. Now add ΒΌ cup of oil, 1 teaspoon baking powder and 2 eggs to each cake mix.
- Mix using a hand mixer or you can make use of a whisk or wooden spoon to form a dough. Dough will appear sticky, but will be firm. Chill dough for a few minutes in freezer at this point if you find it way too sticky to work with.
- Divide both the doughs into 24 balls using a cookie scoop. Take a ball of vanilla and a ball of strawberry dough and roll them together.
- Repeat with the remaining balls, till all the dough is used up.
- You will have 24 cookie dough balls in the end. Place them on your pre-lined sheet and stick them in freezer for 10 minutes or until they are firm to touch.
- Bake these for 9-10 minutes. Let them cool for a few minutes on baking tray and cool down on wire stand further. Melt some chocolate and dip the cooled cookies in it. Now place dipped cookies on a parchment lined tray again and allow the chocolate to set.
- Top with sprinkles of choice immediately before the chocolate sets. Enjoy!
Notes
Storage Information:
- The cookies will stay fresh for about 3-4 days at room temp covered tightly.
- Both baked cookies and unbaked cookie dough balls can be frozen. Thaw baked cookies on the counter top overnight before serving. No need to thaw unbaked cookie dough balls. Just bake them for an extra minute.
