Healthy Date Bars ingredients:
- Pitted Dates: I love to use medjool dates in these dates bar.
- Mixed Nuts: A combination of walnuts, cashews, pistachios and almonds (in equal amounts) tastes so good here,
- A tablespoon of clarified butter(ghee): You may also replace it with regular butter or even coconut oil. But clarified butter gives these bars an unbeatable flavor.
As dates are very sweet to taste, these bars require no extra sugar at all. And the stickiness in them helps to bind nuts with ease!
This is such an easy breakfast bar recipe to put together. Keep them refrigerated as they taste so good right out of fridge. Grab one in the morning and out the door you go!

Healthy Date Bars
Ingredients
- 1 Cup Mejdool Dates (grounded)
- ¾ Cup Mixed Nuts (Chopped, I used walnuts, cashews, almonds and pistachios)
- 1 Tbsp Clarified butter/ Butter/ Coconut Oil
Instructions
- Lightly roast all the chopped nuts for 3-4 minutes on medium flame.
- Now add grounded dates in the pan and add in a tablespoon of clarified butter.
- Stir and mix dates with nuts for another 4-5 minutes over medium-high heat.
- Invert the mixture in a parchment or foil lined mini square/rectangle pan. Press using a spatula or spoon to set the mixture covering whole pan. Garnish with a few chunks of nuts (optional).
- Cover the pan and allow to set in the refrigerator for 2 hours minimum. QUICK TIP: To speed up this process freeze the bars for 30 minutes.
- Cut using a sharp knife. Left overs can be saved at room temp. or in the refrigerator (Covered at all times).
What is the shelf life of these bars,n can it b out in roomtemperature
Absolutely! These bars will stay good at room temp. (stored in an air tight container) for up to a week. Alternatively, you can also store them in refrigerator.
I don’t have a food processor. Do you think if I chop the dates fine that would work?
Hi Karen! Ground dates act like a binder in this recipe. You can even grind them in a blender, I believe that should work better instead.
I didn’t have dates on hand so used figs instead. Recipe worked perfectly!
My husband is type 2 diabetic. How will this affect his blood sugar? Can I also add in Chia seeds and pumpkin seeds?
Adding seeds sounds great. I am sorry I have no idea if dates are good for diabetic persons.
Dates are fine for a diabetic person as long as you don’t eat to many in one sitting. Recommend amour per day is 2-3.

Did you use water in making the date paste? The paste was really thick and hard to mix. Tasted great though.
No I did not use any water. Were your dates dry? If they are dry, you may use a tsp or two of water to help them grind. But they should be alright as is otherwise. I am glad you liked them!

I cannot use any oils or butters. Do I really need to use it in this recipe?
Won’t the ground dates hold everything together?
A little oil/butter adds a ton of flavor to these bars. However if you can't add it, the bars will still turn out good. 🙂

Hi Tammy! I set these bars in a small rectangular pan. You can easily fit them into pretty much any small pan. 6 inch square pan will work wonderfully here.
